Batten Island Fish with Pineapple and Almondine

  • 4 1/2lb fillets (any whitefish will do)
  • 8 oz crushed pineapple, drained
  • 8 oz slivered almonds
  • 2 oz Batten Island Mild, Hot or Xtra Hot
  • Tear off 4 sheets of foil large enough to wrap each fillet. Place fillets on foil and liberally apply Batten Island and pineapple mixture. Sprinkle slivered almonds atop each fillet then carefully fold and cover each with remaining foil. Cook in preheated oven at 350° for approx. 25-30 minutes.

    Batten Island Candied Baked Beans


  • 4 slices smoked bacon chopped
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 (15oz) can Boston Baked Beans
  • 1 cup diced granny smith apples
  • 1 tbsp prepared mustard
  • ¼ cup brown sugar
  • ¼ cup cane syrup or molasses
  • 1 (5oz) bottle of Batten Island Gourmet Sauce (mild, hot or extra hot...your choice)
  • In a 12" iron skillet or large non-stick pan, add olive oil and chopped bacon pieces. Once the bacon starts to crisp, add onion and shortly thereafter the rest of your ingredients. Simmer for 30 minutes so the flavors can marry. Salt and pepper to taste.
